Baingan ka bharta recipe |easy baingan ka bharta recipe |smoky eggplant curry is a simple, easy and delicious side dish prepared with baingan (eggplant/brinjal), onions and spices. It is a popular north indian side dish prepared with smoky eggplant.

                         Recipe of baingan ka bharta

Serves: 3-4

Cooking time: 18 – 20 minutes

Ingredients

1 cup = 300 ml

1 tbsp = 15 ml

1 tsp = 5 ml

For roasting baingan

  • Baingan / eggplant / बैंगन / கத்திரிக்காய் (big size) – 1
  • Cooking oil/vegetable oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 1 tsp
  • Green chillies / हरी मिर्च / பச்சை மிளகாய் – 4 (1 green chilli in each slit)
  • Garlic cloves /  – 8 (2 garlic cloves in each slit)
  • Hing powder/asafoetida/ हिंग / பெருங்காயம் – ½ tsp (1/8 tsp in each slit)

For grinding

  • Tomatoes / टमाटर / தக்காளி (medium size) – 2
  • Green chillies / हरी मिर्च / பச்சை மிளகாய் – 1
  • Ginger / अदरक / இஞ்சி  – 1 inch
  • Water / पानी / தண்ணீர் – 1/8 cup

For baingan ka bharta

  • Cooking oil/vegetable oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 2 tbsp
  • Cumin seeds / जीरा / சீரகம் – ½ tsp
  • Ginger / अदरक / இஞ்சி – ½ inch (finely chopped)
  • Garlic / लहसुन / பூண்டு பற்கள் (small size) – 8 cloves (chopped)
  • Onions / प्याज / வெங்காயம் (medium size) – 2
  • Cumin powder / जीरा चूर्ण / சீரகம் தூள் – ¼ tsp
  • Garam masala powder / गरम मसाला पाउडर / கரம் மசாலா பொடி – ¾ tsp
  • Red chilli powder / लाल मिर्च पाउडर / மிளகாய்த்தூள் – ¾ tsp
  • Turmeric powder / हल्दी पाउडर / மஞ்சள் தூள்– ¼ tsp
  • Coriander powder / धनिया पाउडर / மல்லி தூள் – ½ tsp
  • Salt / नमक / உப்பு  – required
  • Coriander leaves / धनिये के पत्ते / கொத்துமல்லி தழை – few (for garnishing)
Method

For roasting baingan

  1. Make 4 slits over baingan (brinjal/eggplant).
  2. Insert green chillies (1), garlic cloves (2) and hing powder (asafoetida)(1/8 tsp) in each slit.
  3. Apply cooking oil (1 tsp) over the baingan (brinjal/eggplant).
  4. Place a stand over the flame. Place baingan (brinjal/eggplant) over it.
  5. Roast baingan (eggplant / brinjal ) on all its sides (until it gets cooked well).
  6. Cool it down at room temperature and peel the skin.
  7. Remove the calyx (top) uncooked part of baingan.
  8. Mash the peeled and cooked baingan (eggplant) along with the roasted green chillies, garlic cloves and hing powder (asafoetida). Mashed baingan mixture is ready.

For grinding

  1. Grind the tomatoes, green chillies and ginger with water (1/8 cup) to a puree. The ground puree is ready.

For preparing baingan ka bharta

  1. Add cooking oil (2 tbsp) to a kadai or pan.
  2. Add cumin seeds, garlic cloves and ginger to it. Roast it for 30 seconds at medium flame.
  3. Add onions to it and sauté until it turns slightly brown (at medium flame).
  4. Then, add the ground puree, coriander powder, cumin powder, turmeric powder, red chilli powder and garam masala powder to it.
  5. Saute until it becomes thick at high flame (all water evaporates – it took 3 minutes).
  6. Add the mashed baingan mixture and salt (required) to it. Mix it well.
  7. Cook covered for 2 minutes at a low-medium flame. Turn off the flame.
  8. Garnish with coriander leaves.
