Dum Aloo

dum aloo

Dum aloo is the potato based dish prepared with Baby potatoes and spices. Enjoy this toothsome Side dish with Jeera rice, Roti, Naan and Phulka.

Cooking time:

For boiling Water : 3 minutes

For Deep frying Baby potatoes : 5-7 minutes

For preparing Gravy: 20- 24 minutes

Serves: 4-5

Ingredients

1 cup = 300 ml

1 spoon = 10 ml

1 tsp = 5 ml

1 coffee spoon = 2.5 ml

For preparing deep fried Baby potatoes

  • Peeled Baby potatoes (Small) – 33
  • Salt – required
  • Water – 2 ½ cup (1 cup = 300ml)
  • Cooking oil – for deep frying

For grinding (to prepare a ground paste)

  • Cashewnuts -11
  • Cinnamon – 2 inch
  • Cardamom – 6
  • Khus khus (poppy seeds) –2 coffee spoon
  • Black pepper – 10
  • Cumin seeds – 1 tsp
  • Coriander seeds – 1 tsp
  • Saunf (Fennel seeds) – 1 tsp
  • Curry leaves – few (1 tbsp)
  • Kashmiri Red Chillies – 4
  • Green Chillies – 3 (chopped)
  • Ginger – 1 inch (chopped)
  • Coriander leaves – few
  • Small sized Tomatoes – 2 (chopped)
  • Water – 40ml

For Curd Mixture

  • Thick Curd – 1 cup (1 cup = 300ml)
  • Khoya/Mawa – 1 spoon (heap) ( 1 spoon = 10 ml)
  • Water – 60ml

For gravy

  • Prepared Curd mixture
  • Cooking oil – 2 spoons ( 1 spoon = 10 ml)
  • Big sized Onions – 2 (Chopped)
  • Medium sized Tomato – 2 (chopped)
  • Turmeric powder – ½ coffee spoon
  • Red Chilli powder /Kashmiri Red Chilli powder– ½ tsp (heap)
  • Sugar (Normal/Brown) – ½ tsp
  • Water – 40 ml
  • Salt – required
  • Fresh cream – 1 ½ spoon (heap) + 1 tsp (heap)
  • Kasuri methi (Dried Fenugreek leaves) – few (Crushed)

For garnishing

  • Ghee – 1 tsp (heap)
  • Cashewnuts – 5 (finely chopped)
  • Almonds – 10 (finely chopped)
  • Raisins – 9
  • Coriander leaves – few

Method

To prepare Deep fried Baby potatoes

  1. Peel the baby potatoes and make little holes in it (baby potatoes) using the fork (in all the directions) .
  2. Boil the water and required salt for 3 minutes at high flame.
  3. Soak the baby potatoes in the salt water for 30 minutes and close the lid. Drain the water and dry it with clean dry cloth.
  4. Deep fry the potatoes in the cooking oil until it turns golden brown. Fried potatoes are ready.

To prepare Ground paste

  1. Grind the Tomatoes, Cashewnuts, cinnamon, cardamom, poppy seeds (Khus Khus), black pepper, cumin seeds, coriander seeds, Fennel seeds (Saunf), curry leaves, Kashmiri red Chillies, Green Chillies, Ginger, Coriander leaves and water to a smooth paste. Ground paste is ready to use.

To prepare curd mixture

  1. Mix the curd and Khoya together. Add little water (60ml) while mixing. Curd mixture is ready.

To prepare Gravy

  1. Add cooking oil to the kadai. Add the Onions and required salt to it. Sauté till it becomes pink and transparent at medium flame.
  2. Add the chopped Tomatoes, prepared ground paste and water (40ml) to it. Mix it well and cook it for 2 minutes.
  3. Add the prepared Curd mixture, turmeric powder, red Chilli powder and sugar to it.
  4. Mix it well and cook for 2 minutes at low flame (Simmer).
  5. Add fresh cream (1 ½ spoon (heap)) and required salt to it.
  6. Mix it well and Cook it for 2 minutes (until yellow froth appears) at medium flame.
  7. Add the prepared deep fried potatoes to it and cook for 5 minutes at medium flame.
  8. Add fresh cream (1 tsp (heap)) to it. Mix it well and close with lid for (4-5) minutes at medium flame. Turn off the flame.

For Garnishing

  1. Roast the Cashewnuts (chopped) and almonds (Chopped) with the Ghee until it gets roasted at low flame.
  2. Add the raisins to it and mix it well. Turn off the flame.
  3. Transfer it to the prepared dum aloo. Garnish with little coriander leaves.
