Aloo bonda recipe | crispy potato bonda | batata vada | आलू बोंडा | बटाटा वडा |உருளைக்கிழங்கு போண்டா is a tasty, toothsome and an easy snack prepared with potatoes, onions, besan flour(kadalai maavu), rice flour, corn flour, masala powders, spices, etc,. It is also known as batata vada. Batata vada recipe is a popular fast food in Maharashtra, India. This easy aloo bonda recipe is famous both in both north india as well as in south india. It is prepared in south indian style. Any types of chutney (mint Chutney), tomato sauce are an excellent side dish for this simple bonda.

Here, the potatoes are first steam cooked or boiled in a pressure cooker and later crumbled and mixed along with the spices. Corn flour and rice flour are added to make the aloo bonda crispy. The prepared batter should neither be too watery or thick. The potato balls should be covered with batter on all its sides. It is better to use fork for the uniform coating of the batter. The cooking oil/vegetable oil should be hot before deep frying the balls. The balls should be deep fried in low or medium flame.                Aloo bonda recipe | crispy potato bonda | batata vada recipe

Cooking time: less than 20- 25 minutes

Serves: 9 bondas

Ingredients

1 tbsp = 15 ml

1 tsp = 5ml

1 cup = 300 ml

For aloo (potato) bonda / batata vada batter:

  • Besan flour / gram flour / बेसन आटा /  கடலை மாவு – ¾ cup
  • Rice flour / चावल का आटा / அரிசி மாவு – 1/8 cup
  • Corn flour / मक्के का आटा / சோள மாவு – 1/8 cup
  • Ajwain/carom seeds / अजवाइन / ஓமம் – ¼ tsp
  • Red chilli powder / लाल मिर्च पाउडर / சிவப்பு மிளகாய் தூள் – ¼ tsp
  • Turmeric powder / हल्दी पाउडर / மஞ்சள் தூள் – ¼ tsp
  • Hing powder/asafoetida / हिंग / பெருங்காயம் – 1/8 tsp
  • Baking/ cooking soda / बेकिंग सोडा / சமையல் சோடா – ¼ tsp
  • Salt / नमक / உப்பு – required
  • Cooking oil/vegetable oil /  खाना पकाने का तेल / சமையல் எண்ணெய்   – 2 tbsp
  • Water / पानी / தண்ணீர் – ½ cup

For preparing potato/aloo stuffing:

  • Cooking oil/vegetable oil / खाना पकाने का तेल / சமையல் எண்ணெய்  – 3 tbsp
  • Mustard seeds /  सरसों के बीज / கடுகு – ½ tsp
  • Cumin seeds / जीरा / சீரகம் – ½ tsp
  • Hing powder/asafoetida /  हिंग / பெருங்காயம் – 1/8 tsp
  • Green chillies / हरी मिर्च / பச்சை மிளகாய் (large size) – 1 (finely chopped)
  • Ginger / अदरक / இஞ்சி – 1 inch  (finely chopped)
  • Cashew nuts /  काजू / முந்திரிப்பருப்பு  – 10 (chopped)
  • Curry leaves / करी पत्ते / கறிவேப்பிலை- few
  • Onions / प्याज / வெங்காயம் (medium size) – 2 (chopped)
  • Turmeric powder / हल्दी पाउडर / மஞ்சள் தூள் – ¼ tsp
  • Red chilli powder / लाल मिर्च पाउडर / சிவப்பு மிளகாய் தூள் – ½ tsp
  • Coriander powder / धनिया पाउडर / கொத்தமல்லி தூள் – ¼ tsp
  • Garam masala powder / गरम मसाला पाउडर / கரம் மசாலா பொடி – ¼ tsp
  • Potato / आलू / உருளைக்கிழங்கு (medium size) – 3
  • Salt / नमक / உப்பு – required
  • Coriander leaves/ धनिये के पत्ते / கொத்துமல்லி தழை – few
  • Lemon / नींबू / எலுமிச்சை (medium size) – ½

For deep frying

  • Cooking oil/vegetable oil / खाना पकाने का तेल / சமையல் எண்ணெய்
Method

For preparing aloo bonda / batata vada batter:

  1. Take besan flour, rice flour, corn flour in a bowl.
  2. Add Ajwain /carom seeds, red chilli powder, turmeric powder, hing powder, baking/cooking soda, salt (required) and cooking oil (2 tbsp) to it. Mix it well.
  3. Then, add water little by little and mix it well to form batter (The total amount of water required is ½ cup).
  4. Rest the batter for 35- 45 minutes. Aloo bonda /batata vada batter is ready to use (Please check the consistency of the batter in the above video recipe. The consistency should neither be too watery or too thick).

For preparing potato/ aloo stuffing:

  1. Boil/steam cook the potatoes in a steamer/pressure cooker.
  2. Crackle the mustard seeds in cooking oil (3 tbsp).
  3. Add cumin seeds, hing powder (asafetida), green chillies, ginger, curry leaves and cashew nuts to it. Sauté until Cashewnuts turns slightly golden.
  4. Add onions, red chilli powder, turmeric powder, coriander powder and garam masala powder to it. Sauté until the onions become transparent.
  5. Crumble the boiled / steam cooked potatoes over it. Add salt (required) to it and mix it well. Turn off the flame.
  6. Squeeze lemon and mix it well. Garnish with coriander leaves. Aloo/potato stuffing is ready.
  7. Make small-medium sized balls with the stuffing. Aloo/potato balls are ready.

For preparing aloo bonda / batata vada:

  1. Dip the aloo/ potato balls in the aloo bonda batter (please make sure that the batter covers the aloo/potato balls on all its sides. I have used a fork to dip, lift and deep fry the balls. You can also use your hands.
  2. Heat the cooking oil in a medium flame.
  3. Deep fry the batter dipped balls in it until it turns golden brown at medium flame. Serve hot.

Note:

  1. Please make sure that the batter covers the aloo/potato balls on all its sides. I have used a fork to dip and lift the balls as it helps uniform coating of the batter over the balls. You can also use your hands.
  2. For beginners and people who are scared to use hands for deep frying the balls, the fork is the best option to use.
