Stuffed Brinjal is a mouth-watering Curry based dish. It is a perfect Side dish for Rice, Roti and Chapati. This appetizing Curry is prepared with Brinjals, Chana dal, Urad dal, Sesame Seeds and Spices.
Cooking time: 15-20 minutes
Serves: 2
Ingredients
1 cup = 300 ml
1 spoon = 10 ml
1 tsp = 5 ml
1 coffee spoon = 2.5 ml
- Whole Brinjal – 5
- Chana dal – ¼ cup
- Urad dal – ¼ cup
- Sesame Seeds – ¼ cup
- Heeng powder – ½ tsp
- Red Chillies – 10
- Mustard Seeds – ¾ tsp
- Cooking Oil – 3 spoon
- Salt – required
Method
- Dry roast the Chana dal, Urad dal, Sesame Seeds, Heeng powder, Red Chillies and required Salt for 4 minutes, in a Kadai at low flame. Cool the mixture for 3 minutes and then grind it to a powder. Stuffing is ready. Divide it equally (number of divisions should be equal to the number of Brinjals).
- Slit the Whole Brinjals partially and stuff it with the stuffing divisions.
- Roast the Mustard Seeds with the Cooking Oil until it crackles, in a Kadai at low flame.
- Then, add the stuffed Brinjals to it. Roast the Brinjals until it turns brown. Sprinkle little Water and use Cooking Oil (if required) while roasting. Switch off the flame. Stuffed Brinjal is ready.
