This veg noodles recipe can be prepared with any varieties / types (brands) of noodles such as maggi, top ramen, sunfeast yipee noodles, etc,. It can also be prepared by kids as the cooking is very easy. The addition of garam masala and olive oil (extra virgin) adds an extra flavor and taste to this indian style dish. In restaurants, hakka noodles will be used & it will be prepared with sauces and it is a different recipe.

Ingredients
1 tbsp = 15 ml
1 tsp = 5 ml

- Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 2 tbsp
- Green chillies / हरी मिर्च / பச்சை மிளகாய் (large size) – 1 (slit)
- Onion / प्याज / வெங்காயம் (medium size) – 2 (sliced)
- Tomato / टमाटर / தக்காளி (medium size) -2
- Capsicum/bell peppers / शिमला मिर्च / குடைமிளகாய் (medium size) – 2 (diced)
- Carrot / गाजर / கேரட் (medium size) – 2 ( cut in strips)
- Green peas / हरी मटर / பச்சை பட்டாணி – ¼ cup (1 cup = 300 ml)
- Potato / आलू / உருளைக்கிழங்கு (medium size) – 1 (chopped)
- Salt / नमक / உப்பு – required (for vegetables)
- Red chilli powder / लाल मिर्च पाउडर / சிவப்பு மிளகாய் தூள் – ¼ tsp
- Garam masala powder / गरम मसाला पाउडर / கரம் மசாலா பொடி – 1 ¼ tsp
- Water / पानी / தண்ணீர் – 600 ml
- Noodles taste maker / नूडल्स का टेस्टमेकर / நூடுல்ஸ் மசாலா (masala) – 4 packets
- Noodles / नूडल्स / நூடுல்ஸ் – 300 grams
- Olive oil / जैतून के तेल / ஆலிவ் எண்ணெய் (Extra virgin) – ¾ tbsp (optional)
- Coriander leaves / धनिये के पत्ते / கொத்துமல்லி தழை – few
Method
- Roast the Green chillies and onions with the cooking oil until onions turn slightly brown at high flame.
- Add tomatoes to it and cook until it turns soft.
- Add carrot, potato, green peas, capsicum, salt (required), garam masala powder and red chilli powder to it and cook until the vegetables are cooked (at high flame).
- Add water and noodles taste maker to it. Allow it to boil until froth and small bubbles appears.
- Add noodles to it and cook covered until it is cooked well (4 minutes at medium flame). Turn off the flame.
- Add olive oil to it and mix it well (optional). Garnish with coriander leaves.
