Beetroot pulao | बीटरूट पुलाव | பீட்ரூட் புலாவ் is an easy beetroot variety rice prepared with beetroot, rice, onions and spices. Potato fry is an excellent side dish for this recipe. Curd/ Yogurt is a simple side dish for this beetroot rice dish. It is also known as beetroot fried rice locally. This beet pulao can also be prepared over a tawa commonly known as beetroot tawa pulao. It will be looking more attractive if it is cooked over a tawa. It is a famous south indian and north indian cuisine.

Beetroot pulao| बीटरूट पुलाव | பீட்ரூட் புலாவ் recipe
Cooking time: less than 15- 18 minutes

Ingredients
1 tbsp = 15 ml
1 tsp = 5 ml

For cooking rice:
- Raw basmati rice / बासमती चावल / பாசுமதி அரிசி – 1 ¾ cup (where 1 cup = 300 ml)
- Water (for soaking rice) / पानी / தண்ணீர் – 1 ½ cup ( where 1 cup = 300 ml)
- Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 5 tsp
- Salt / नमक / உப்பு – required for rice
- Water (for cooking rice) / पानी / தண்ணீர் – 2 ¼ cup ( where 1 cup = 300 ml)
For Beetroot pulao:
- Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 3 tbsp
- Fennel seeds / saunf / सौंफ के बीज / பெருஞ்சீரகம் – 1 tsp
- Cloves / लौंग / கிராம்பு – 5
- Cinnamon / दालचीनी / இலவங்கப்பட்டை – 2 inch
- Bay leaves / तेज पत्ता / பிரியாணி இலை – 2
- Cardamom / इलायची / ஏலக்காய் – 4
- Red chillies / लाल मिर्च / சிவப்பு மிளகாய் – 3
- Green chillies / हरी मिर्च / பச்சை மிளகாய் – 1 (slit)
- Garlic cloves / लहसुन लौंग / பூண்டு பற்கள் (medium size) – 15
- Onions / प्याज / வெங்காயம் (medium size)- 2 (sliced)
- Beetroot / चुकंदर / பீட்ரூட்(very big size )- 1 (grated)
- Salt / नमक / உப்பு – required
- Cumin powder / जीरा पाउडर / சீரகம் தூள் – ½ tsp
- Garam masala powder / गरम मसाला पाउडर / கரம் மசாலா பொடி – 1 tsp + ½ tsp
- Coriander powder / धनिया पाउडर / கொத்தமல்லி தூள் – ½ tsp
- Black pepper powder / काली मिर्च पाउडर / மிளகு தூள் – ½ tsp
- Olive oil / जैतून के तेल / ஆலிவ் எண்ணெய் (Extra virgin) – 1 tbsp (optional)
- Lemon / नींबू / எலுமிச்சை (big size) – ½
- Mint leaves / पुदीने की पत्तियां / புதினா இலைகள் – few (chopped)
Method
For cooking rice:
- Soak the basmati rice in water (1 ½ cup) for 20 minutes.
- Drain the excess water.
- Add cooking oil and salt (required for the rice) to it. Mix it well.
- Add water (2 ¼ cup) to it and pressure cook for 13 minutes with vent weight (whistle) at high flame. Note: The cooked rice should be separate (not be mushy).
For Beetroot pulao:
- Roast the fennel seeds (saunf), cloves, cinnamon, bay leaves, cardamom, red chillies, green chillies and garlic cloves in cooking oil (until the garlic cloves turns slightly golden brown at medium flame).
- Add onions to it and sauté until onions become transparent.
- Add beetroot, salt (required for vegetables), cumin powder, garam masala powder (1 tsp), coriander powder and black pepper powder to it.
- Sauté and cook the beetroot until it gets cooked well (it took 7 minutes at medium-high flame to cook the beetroot completely. If you are using high flame, please sauté the beetroot frequently else it may get burnt at the bottom).
- Add the cooked rice to it and mix it well.
- Sprinkle Garam masala powder (½ tsp) and add olive oil (extra virgin) to it (Adding olive oil is optional. It can also be replaced with cooking/vegetable oil).
- Mix it well and turn off the flame.
- Squeeze lemon over it and mix it well. Garnish with mint leaves. Ready to serve. You may also like Vegetable rice , Vegetable pulao , Veg fried rice.
