Method
For preparing poornam:
- Dissolve the jaggery in water ( ¼ cup) and then filter it. Jaggery water is ready.
- Grind the grated coconut for 10 seconds in a mixer/grinder to make it smooth.
- Cook the coconut powder, jaggery water and ghee (1 tsp) in a kadai at medium flame (keep on stirring the mixture else it may get burnt at the bottom.
- Add cardamom powder to it when the mixture starts thickening.
- Cook until the mixture thickens (all the moisture gets evaporated). Poornam is ready. Turn off the flame.
- Cool the poornam.
- Make balls with it (using greased hands (greased with little ghee)). Poornam balls are ready.
For preparing poli:
- Add turmeric powder, cooking oil (2 tbsp) and salt to the maida/all purpose flour.
- Add water (½ cup) to it and knead it to a smooth and slightly sticky dough.
- Then, again add cooking oil (1 ¼ tbsp) to it. Knead the dough for 3 minutes.
- Again, add cooking oil (¼ tbsp) to it and knead the dough for 30 seconds.
- Close the dough with a lid for 2 hours (let the dough rest).
- Open the lid and add cooking oil (¾ tbsp) to it and knead well.
- Make a ball with the dough.
- Flatten the dough ball over a greased (oil greased) butter/baking paper using hands.
- Place a poornam ball at the centre of it and enclose it with the edges of the flattened dough.
- Again, flatten it using hands in a such a way that the poornam gets spread (inside) equally. Now, poli is ready to cook.
- Cook the poli over a hot greased tawa (tawa greased with little ghee) at low flame on both sides.
- Flip the sides of the poli while cooking (until slightly brown spots appears on both sides. Don’t flip the poli too much else it may turn hard).
- Serve hot.
Tips for storage:
- Place the prepared poli over a plate and cool for just few seconds. Store the poli placing it one over the other in a container (fold it before storing).
