Veg sizzler is an assortment of mildly spiced veggies, rice and Aloo Tikki over a sizzling plate. Enjoy this delicious Veg sizzler at home with this simple recipe. Here is the video recipe.

Ingredients
For cooking raw Basmati rice:
- Raw Basmati rice – 1 cup
- Water – 1 ¼ cup
- Cooking oil – 2 tsp
Vegetables to be steam cooked:
- Cauliflower – 30 grams
- Beans – 5 (chopped lengthwise)
- Carrot (medium size) – 1 (chopped lengthwise)
- Capsicum/Bell peppers (medium size) – 1 (cubically cut)
For cooking and roasting veggies:
- Cooking oil – 2 tbsp
- Tofu/Paneer/Cottage cheese– 100 grams (cut in cubes)
- Potato (medium size) – 1 (chopped lengthwise)
- Tomato (medium size) – 1 (half cut)
- Onions (medium size) – 2 (sliced)
- Salt – required
- Pepper powder – ½ tsp
For preparing rice:
- Cooking oil – 1 tbsp
- Green Chillies –2 (finely chopped)
- Garlic cloves – 20 (finely chopped)
- Corn – 20 grams
- Green peas – 40 grams
- Cooked rice
- Pepper powder – ¼ tsp (for corn and green peas) + ½ tsp
- Vinegar (apple cider/white/brown) – 1 tbsp
- Coriander leaves (chopped)- few
For sauce:
- Cooking oil – 1 tbsp
- Green Chillies – 2 (finely chopped)
- Garlic cloves – 20 (finely chopped)
- Tomato sauce – 2 ¾ tbsp
- Red Chilli sauce – 2 tbsp
- Ginger garlic paste – ½ tsp
- Garam masala powder – 1/8 tsp (heap)
- Cumin powder – 1/8 tsp
- Sugar – ¼ tsp
- Vinegar (apple cider/white/brown) – 1 tsp
- Salt – required
- Water – (30- 40)ml
For arranging in sizzling plate:
- Cabbage leaves – 3
- Extra virgin olive oil – 2 tsp
Method
For preparing rice:
- Cook the raw basmati rice with 1 ¼ cup of water and cooking oil in a pressure cooker/Electric cooker/instapot (I have cooked the rice in 5 ½ litre pressure cooker for 2 whistles).
For steam cooking the vegetables:
- Steam cook the Grean peas, corn, cauliflower, beans, carrot and capsicum (bell peppers).
For cooking and roasting Veggies:
- Roast the Onions, Tofu/Paneer, potato and tomato with the cooking oil for few seconds and cook covered for 6 minutes in a Kadai at medium flame.
- Again, roast the mixture for 3-5 minutes.
- Then, add the steam cooked vegetables (carrot, Bell peppers (capsicum), beans, cauliflower), salt and pepper powder to it. Mix it well and Turn off the flame. Cooked/roasted veggies are ready.
- Separate the roasted tomatoes and Tofu/ paneer/cottage cheese from the cooked/roasted Veggies.
For preparing Rice:
- Saute the garlic cloves and green Chillies with the cooking oil for a minute in a Kadai at medium flame.
- Then, add steam cooked corn and green peas to it. Mix it well.
- Add salt (little – required for corn and green peas) & pepper powder ( ¼ tsp) and mix it well.
- Add the cooked basmati rice, pepper powder, required salt and vinegar to it. Mix it well. Turn off the flame.
- Garnish with coriander leaves. Rice is ready.
For preparing Sauce:
- Sauté the green Chillies, garlic cloves for a minute with the cooking oil in a kadai at medium flame
- Then, add the tomato sauce, red Chilli sauce, Ginger garlic paste, Garam masala powder, cumin powder, sugar, vinegar and required salt. Mix it well.
- Add little water (30- 40 ml) to adjust the consistency. Mix it well and cook for less than a minute. Turn off the flame. Hot sauce is ready.
For heating sizzler plate:
- Heat the sizzler plate in a direct flame for 8- 10 minutes (at high flame). Then, transfer the plate to the wooden base.
For arrangement over sizzler plate:
- Cover the sizzling plate with cabbage leaves (to avoid the food from getting burnt).
- Place the prepared rice over the plate.
- Then, place the prepared cooked/roasted veggies.
- Place the prepared cooked/roasted tomatoes and Tofu/Paneer/Cottage cheese.

- Pour the prepared hot sauce over it. Pour the extra virgin olive oil over it. Enjoy the sizzling veg sizzlers at home.
