This is a very popular eggless dessert which will be loved by people of all ages.
The cream can be whipped with or without machine. Both the methods are explained in this homemade vanilla ice cream recipe. In the first method, the cream is whipped using a whisker and machine is not required to prepare it. In the second method, the cream is whipped using a hand mixer machine. It is a very simple, easy and quick recipe which can be easily prepared even by kids. Enjoy this tasty vanilla ice cream at home.

1 tsp = 5 ml
- Fresh cream / मलाई / கிரீம் – 450 ml
- Condensed milk / कन्डेंस्ड मिल्क / சுண்டிய பால் – 300 grams
- Vanilla essence / वैनिला एक्सट्रेक्ट / வெண்ணிலா சாறை – 2 tsp
- Chocolate syrup / चॉकलेट सीरप / சாக்லேட் சிரப் – for garnishing
Method for whipping cream
1 ST METHOD for WHIPPING CREAM WITHOUT MACHINE
- Refrigerate the whisker and stainless vessel for 2-3 hours.
- Refrigerate the fresh cream for 48 hours and use it.
- Whip it in the same direction (clock wise) continuously using a whisker for 12- 14 minutes to get soft peaks.
- It is better to use stainless steel vessel for whipping the cream.
- Both the vessel and whisker should be chill while whipping the cream.
- The fresh cream should also be refrigerated as refrigeration thickens the liquid cream naturally.
- The whipping should be started as soon as you take the vessel, whisker and cream is taken out of the refrigerator.
- Some fresh creams may stay in the same liquid form even after refrigeration. Please don’t worry. Please whip for 2-3 minutes in extra than the above mentioned time, you will get soft peaks.
- You can take breaks while whipping the cream but the main point that has to be in mind is that it should be whipped in the same direction as how it has been started. For example, if the whipping is started in the clockwise direction, it should be continued in the same clock wise direction till you get soft peaks.
- Fresh creams will start thickening after 7-8 minutes of continuous whipping.
2 ND METHOD for WHIPPING CREAM WITH MACHINE
- Whip / beat the fresh cream using hand mixer machine until soft peaks arrives (always whip in the same direction till the end).
Method for preparing vanilla ice cream
For preparing vanilla ice cream
- Add condensed milk and vanilla essence to the whipped cream.
- Mix it (mix by folding it. Please don’t stir it. Please refer video above).
- Pour it in a container and cover it with plastic food wrap (the purpose of covering with plastic food wrap is to prevent ice crystals falling on the ice cream directly. Covering with plastic food wrap is optional).
- Then, close the container with a lid and freeze it for 8 hours. Serve chill with chocolate syrup.
