Sambar vada recipe | sambar vadai | vada sambar recipe is a simple, easy, tasty and delicious snack prepared with vada, toor dal, onions, tomatoes, tamarind and spices.

Here in this recipe, the vada is prepared first. Then, the toor dal and garlic cloves are pressure cooked with turmeric powder & salt. Later, the mashed dal mixture is cooked along with spices, onions, tomatoes, tamarind water and sambar powder to prepare a delicious sambar. At last, the prepared vada is soaked in hot water for few minutes and squeezed to drain the excess water from it. Then, it is served with hot sambar and chopped onions. Ingredients
1 cup = 300 ml
1 tbsp = 15 ml
1 tsp = 5 ml

For pressure cooking
- Toor dal / pigeon peas / अरहर की दाल / துவரம் பருப்பு – ½ cup (1 cup = 300 ml)
- Garlic cloves / लहसुन लौंग / பூண்டு பற்கள் (medium size) – 15
- Turmeric powder / हल्दी पाउडर / மஞ்சள் தூள் – ½ tsp
- Water for cooking toor dal / पानी / தண்ணீர் – 1 cup (1 cup = 300 ml)
- Salt / नमक / உப்பு – required
For preparing tamarind water
- Tamarind / इमली / புளி – small lemon size
- Water for dissolving tamarind / पानी / தண்ணீர் – ¾ cup (1 cup = 300 ml)
For preparing sambar
- Sesame oil/gingelly oil / तिल के तेल / நல்லெண்ணெய் – 3 tbsp
- Ghee / घी / நெய் – ½ tsp
- Mustard seeds / सरसों के बीज / கடுகு – ¾ tsp
- Cumin seeds / சீரகம் / जीरा – ¾ tsp
- Fenugreek seeds / मेथी बीज / வெந்தயம் – ¼ tsp
- Hing powder/ asafoetida / हिंग / பெருங்காயம் – ¼ tsp
- Curry leaves / करी पत्ते / கறிவேப்பிலை – few
- Dry red chillies / लाल मिर्च / சிவப்பு மிளகாய் – 3
- Green chillies / हरी मिर्च / பச்சை மிளகாய் (big size) – 1
- Onions / प्याज / வெங்காயம் – 3 medium size (for preparing sambar) + 1 large size (chopped for garnishing)
- Tomatoes / टमाटर / தக்காளி (medium size) – 2 (finely chopped)
- Coriander powder / धनिया पाउडर / கொத்தமல்லி தூள் – ½ tsp
- Turmeric powder / हल्दी पाउडर / மஞ்சள் தூள் – ¾ tsp
- Salt / नमक / உப்பு – required
- Water / पानी / தண்ணீர் – 60 ml
- Sambar powder / सांभर पाउडर / சாம்பார் தூள் – 3 tsp
- Coriander leaves / धनिये के पत्ते / கொத்துமல்லி தழை – few
For immersing vada in water
- Hot water / गर्म पानी / வெந்நீர் – 1 ½ cup (where 1 cup = 300 ml)
- Salt / नमक / உப்பு – ¼ tsp
Method
For vada preparation
- To prepare vada, click here (how to prepare vada).
For preparing sambar
- Dissolve tamarind in a ¾ cup of water. Filter it, if there are any residues. Tamarind water is ready.
- Pressure cook the toor dal, garlic cloves, turmeric powder, salt (required) and water (1 cup) for 20 minutes at high flame (with vent weight (whistle).
- Mash the cooked dal mixture.
- Add the Gingelly oil/sesame oil and ghee to a kadai.
- Then, add mustard seeds to it and crackle it.
- Add cumin seeds, fenugreek seeds, hing powder, curry leaves, dry red chillies and green chillies to it and sauté for a minute.
- Add onions to it and sauté until it turns pink and transparent.
- Then, add tomatoes, coriander powder, turmeric powder and salt (required) to it. Sauté until the tomatoes become soft and juicy.
- Add the prepared tamarind water to it and cook until small bubbles & froth appears.
- Add the mashed dal, water (60 ml) and sambar powder to it. Mix well and cook covered (at medium flame) until froth appears (it took 3 minutes at medium flame).
- Garnish with coriander leaves.
For preparing sambar vada
- Dissolve salt (¼ tsp) in hot water.
- Soak the prepared vada in hot water for 10 – 15 minutes (Note: the vada should not be hot. It should be at normal room temperature when it is dipping in hot water).
- Squeeze the excess water from the vada by pressing it with your hands.
- Pour the hot sambar over the squeeze vada. Garnish with chopped onions.
