                           Masala vada recipe

Cooking time: less than 5 minutes for each vada

Serves: 8 masala vada

Ingredients

1 tbsp = 15 ml

1 tsp = 5 ml

For grinding

  • Chana dal / bengal gram / चना दाल / கடலை பருப்பு – 1 cup ( 1 cup = 225 ml)
  • Water / पानी / தண்ணீர் (for soaking channa dal) – ½ cup (1 cup = 300 ml)
  • Saunf (fennel seeds) / सौंफ के बीज / பெருஞ்சீரகம்  – 1 tsp
  • Cinnamon stick / दालचीनी / இலவங்கப்பட்டை  – 1 ½ inch
  • Red chillies / लाल मिर्च / சிவப்பு மிளகாய் – 2

For mixing

  • Onion / प्याज / வெங்காயம் – 2 (medium size – chopped)
  • Green chillies / हरी मिर्च / பச்சை மிளகாய்  – 2 (finely chopped)
  • Ginger / अदरक / இஞ்சி – 1 ½ inch (finely chopped)
  • Curry leaves / करी पत्ते / கறிவேப்பிலை– few
  • Coriander leaves / धनिये के पत्ते / கொத்துமல்லி தழை  – few
  • Hing powder (asafoetida) / हिंग / பெருங்காயம்  – ¼ tsp
  • Garam masala powder /  गरम मसाला पाउडर / கரம் மசாலா பொடி – ( ½ – ¾) tsp
  • Salt / नमक / உப்பு – required
  • Rice flour / चावल का आटा / அரிசி மாவு – 3 ¼ tbsp
  • Cooking oil (refined) / vegetable oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 1 ½ tbsp + for deep frying
Method
  1. Soak the channa dal in water for 4-5 hours.
  2. Grind the soaked channa dal with cinnamon stick, saunf (fennel seeds) and red chillies to a coarse paste.
  3. Add green chillies, ginger, onion, curry leaves, coriander leaves, hing powder (asafoetida), garam masala powder, salt (required), cooking oil (1 ½ tbsp) and rice flour to the coarse paste. Mix it well.
  4. Make balls with it.
  5. Flatten the balls and bring it to a vada shape.
  6. Deep fry it in cooking oil until it turns golden brown on both sides at low flame (simmer). Enjoy the crispy masala vada.
