Vegetable rice | veg rice preparation | vegetable rice for lunch box | वेजीटेबल राइस| வெஜிடபுள் ரைஸ் is a mildly spiced nutritious rice based dish prepared with vegetables (such as carrot, bean, potato, green peas, onions, etc,.) , rice and spices. Curd/ yogurt is a simple side dish for this  quick and easy veg rice recipes. It tastes delicious and awesome with gobi manchurian paneer butter masala. This vegetable rice indian style is a popular in both north indian cuisine dishesand south indian cuisine recipes. It is a vegan rice recipe too.

This delicious vegetable rice variety is a healthy rice diet , simple, easy and tasty breakfast, dinner and lunch box recipe for kids & adults . It can be cooked in very few minutes with easily available ingredients at home. As lot of vegetables are included in this vegetable rice dish, thus makes it healthy, fiber rich and colorful. This easy recipe can also be prepared with leftover rice.

Unlike biryani, it is a mildly spiced vegetable rice dish. The rice for this tasty vegetable rice recipe is cooked separately in pressure cooker and then it is sauteed with the vegetables and spices. The basmati rice used here can be very well replaced with ordinary white rice, brown rice, etc,. I always prefer this recipe for lunchbox as it is easy and quick to prepare. The lemon and mint leaves added to it, makes this veg rice preparation more flavorful.

This is the simple and tasty way to cook white rice with vegetables. The combination of vegetables and rice in this recipe makes it more nutritious.          VEGETABLE RICE | VEG RICE | वेजीटेबल राइस | வெஜிடபுள் ரைஸ் RECIPE

Cooking time: less than 15 minutes

Serves: 4-5


1 tbsp = 15 ml

1 tsp = 5 ml


For cooking rice:

  • Basmati rice / बासमती चावल / பாசுமதி அரிசி – 1 ½ cup ( where 1 cup = 300 ml)
  • Water / पानी / தண்ணீர் – 1 ¾ cup (where 1 cup = 300 ml)
  • Cooking oil / vegetable oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 1 tsp

For preparing vegetable rice:

  • Cooking oil / vegetable oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 3 tbsp
  • Cumin seeds / जीरा / சீரகம் – ¾ tsp
  • Fennel seeds / saunf / सौंफ के बीज / பெருஞ்சீரகம் – ½ tsp
  • Cinnamon / दालचीनी / இலவங்கப்பட்டை– 4 inch
  • Cloves / लौंग / கிராம்பு – (7 – 9) as per your preference
  • Cardamom / इलायची / ஏலக்காய் – 5
  • Bay leaves / तेज पत्ता / பிரியாணி இலை – 2
  • Cashewnuts / काजू / முந்திரி பருப்பு – 8 (chopped)
  • Green chillies / हरी मिर्च / பச்சை மிளகாய் (large size) – 1 (slit)
  • Onions / प्याज / வெங்காயம் (large size) – 2 (chopped)
  • Carrot / गाजर / கேரட் (medium size) – 2 (chopped)
  • Beans / फलियां / பீன்ஸ் – 8 (chopped)
  • Potato / आलू / உருளைக்கிழங்கு (medium size) – 1 (chopped)
  • Green peas / हरी मटर / பச்சை பட்டாணி – ¾ cup ( where 1 cup = 300 ml)
  • Capsicum / bell peppers / शिमला मिर्च / குடைமிளகாய் (medium size) – 1 (chopped)
  • Salt / नमक / உப்பு – required
  • Red chilli powder / लाल मिर्च पाउडर / சிவப்பு மிளகாய் தூள் – ¾ tsp
  • Pepper powder / काली मिर्च पाउडर / மிளகு தூள் – ¼ tsp
  • Garam masala powder / गरम मसाला पाउडर / கரம் மசாலா பொடி  – 1 ½ tsp
  • Lemon / नींबू / எலுமிச்சை (medium size) – ½
  • Mint leaves / पुदीने की पत्तियां / புதினா இலைகள் – few

For cooking rice:

  1. Soak the basmati rice in water for 20 minutes (Note: Any type of rice can be used).
  2. Drain the excess water.
  3. Add cooking oil (1 tsp) to it and mix it well.
  4. Add water to the rice and pressure cook for 12-13 minutes at high flame with vent weight (whistle). Turn off the flame. Note: The cooked rice should be separate and not mushy.

For vegetable rice:

  1. Add cooking oil to a kadai.
  2. Add cumin seeds, fennel seeds (saunf), cinnamon, cloves, cardamom, bay leaves, green chillies and cashew nuts to it.
  3. Sauté until cashew nut turn slightly golden brown.
  4. Add onions to it and sauté until it become pink and transparent.
  5. Add carrot, beans, potato, capsicum (bell peppers), green peas, red chilli powder, black pepper powder, garam masala powder and salt (required for vegetables) to it.
  6. Mix and sauté the vegetables for 6 minutes at high flame (until the vegetables gets cooked well).
  7. Add the cooked rice and salt (required for rice) to it. Mix it well. Turn off the flame.
  8. Squeeze lemon over it and mix it well.
  9. Garnish with mint leaves. You may like our rice recipes.
