Sweet pongal / sakkarai pongal is a delicious sweet prepared with rice, moong dal, milk, jaggery and cardamom. This recipe is prepared easily in pressure cooker.

Ingredients
1 cup = 300 ml
1 tbsp = 15 ml
1 tsp = 5 ml
- Moong dal / मूंग दाल / பாசிப் பருப்பு – 2 tbsp
- Raw rice / कच्चा चावल / பச்சை அரிசி – 1 cup
- Jaggery powder / गुड़ / வெல்லம் – 1 ¾ cup
- Water to be added for dissolving jaggery – 1 cup
- Water to be added while preparing pongal – 1 ¾ cup
- Milk / दूध / பால் (boiled) – 225 ml
- Ghee / घी / நெய் – 1 tbsp + 1 ½ tbsp
- Cashew nuts – 13
- Raisins – few
- Grated Coconut (fresh / dry) / नारियल पाउडर / தேங்காய் தூள் – 1 tbsp
- Cardamom powder / इलायची पाउडर / ஏலக்காய் பொடி – ½ tsp
- Nutmeg powder / जायफल / ஜாதிக்காய் – ¼ tsp
Method
- Dissolve the jaggery powder in water (1 cup) and filter it. Jaggery syrup is ready.
- Dry roast the moong dal at simmer until raw smell goes off (Please don’t roast the moong dal until it turns golden brown).
- Mix the roasted moong dal and rice together and rinse it well using water (until we get clear water). Drain the excess water.
- Add the rice and moong dal mixture , prepared jaggery syrup and water (1 ¾ cup) to the pressure cooker. Cook for 30 minutes at simmer (with vent weight (whistle)).
- Let the pressure of the cooker subsides completely and then, open the lid of the cooker.
- Add milk and ghee (1 tbsp) to it (when the mixture is hot). Mix it well.
- Roast the Cashew nuts in the Ghee (1 ½ tbsp ) until it turns golden brown in a pan at simmer.
- Then, add the raisins to it and mix it well. Turn off the flame.
- Add the coconut powder, cardamom powder and nutmeg powder to it and mix it well.
- Transfer the contents in the pan to the cooked mixture and mix it well. Hot sweet pongal is ready to serve. This sweet / Sakkarai pongal can also be prepared in ANOTHER METHOD.
