Veg fried rice recipe | quick veg fried rice is an indo chinese cuisine prepared with rice, vegetables, sauces, vinegar and spices. As this fried rice is prepared with lot of vegetables, it is nutritious too. This scrumptious dish will be loved by people of all the ages. This is also known as chinese fried rice.
Veg fried rice is normally cooked only at high flame. The cooked rice should be separate to make a perfect veg fried rice. Here is the simple and easy recipe for homemade veg fried rice.

Veg fried rice recipe
Cooking time: less than 50 minutes
Serves: 3-4
Ingredients
1 cup = 300 ml
1 tbsp = 15 ml
1 tsp = 5 ml

For soaking rice:
- Basmati rice / बासमती चावल / பாசுமதி அரிசி – 1 ½ cup
- Water for soaking rice / पानी / தண்ணீர் – 1 cup
- Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 2 tbsp
- Water for pressure cooking rice / पानी / தண்ணீர் – 1 ¾ cup
- Salt / नमक / உப்பு – required for rice
For preparing veg fried rice:
- Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 5 tbsp
- Garlic cloves / लहसुन / பூண்டு பற்கள் – 20 (finely chopped)
- Green chillies / हरी मिर्च / பச்சை மிளகாய் – 3 (finely chopped)
- Onions / प्याज / வெங்காயம் (medium size) – 2 ( finely chopped)
- Carrot / गाजर / கேரட் (medium size) – 5 (chopped)
- Capsicum/bell peppers / शिमला मिर्च / குடைமிளகாய் (large) – 1 (chopped)
- Beans / फलियां / பீன்ஸ் – 14 (chopped)
- Soya sauce / सोया सॉस / சோயா சாஸ் – 4 tsp
- Vinegar / सिरका / வினிகர் – 2 tsp
- Black pepper powder / काली मिर्च पाउडर / கருப்பு மிளகு தூள் – ¾ tsp
- Salt / नमक / உப்பு – required (for vegetables)
- Red Chilli sauce / लाल मिर्च सॉस / சிவப்பு மிளகாய் சாஸ் – 2 tsp
- Sesame oil (Gingelly) / तिल का तेल / நல்லெண்ணெய் – 2 tsp
- Coriander leaves / धनिये के पत्ते / கொத்துமல்லி தழை – few (for garnishing)
- Spring onions leaves / हरा प्याज़ / வெங்காயத் தளை – few (for garnishing)
Method
For cooking rice:
- Soak the basmati rice in water (1 cup) for 20 minutes.
- Drain the excess water.
- Add cooking oil (2 tbsp), water (1 ¾ cup) and salt (required for rice) to the soaked rice and mix it well.
- Pressure cook the rice for 30- 35 minutes at low flame ( the rice is cooked in a stainless steel vessel which is kept inside the aluminium pressure cooker, refer the video recipe to know the type of cooker used)(if a different type of cooker is used, the time may vary). The cooked rice should be separate.
- Spread the cooked rice over a plate for 10 minutes.
For cooking veg fried rice:
- Sauté the garlic cloves and onions in the cooking oil (5 tbsp) until the onions become translucent at high flame (in a kadai).
- Then, add green chillies and beans to it. Cook for 3 minutes a high flame (keep on sautéing else the vegetable may get burnt as it is cooked in high flame).
- Add carrot and capsicum to it and again cook for 3 minutes at high flame (keep on sautéing else the vegetable may get burnt as it cooked in high flame).
- Add soya sauce, vinegar, black pepper powder, required salt (for vegetables) and chilli sauce to it. Saute for 2- 3 minutes at high flame.
- Then, add the cooked rice and sesame oil to it. Mix it well. Sauté for 2 minutes at high flame. Turn off the flame.
- Garnish with coriander leaves and spring onions. Serve hot.
