Ingredients
1 tbsp = 15 ml
1 tsp = 5 ml
For stuffing/Masala:
- Potatoes / आलू / உருளைக்கிழங்கு (small size) – 8
- Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 1 tbsp
- Mustard seeds / सरसों के बीज / கடுகு – ¼ tsp
- Urad dal / उदद दाल / உளுத்தம் பருப்பு – ½ tsp
- Chana dal / चना दाल / கடலைப் பருப்பு– ¾ tsp
- Cumin seeds / जीरा / சீரகம் – ½ tsp
- Cashew nuts / काजू / முந்திரி பருப்பு – 8 (chopped)
- Ginger / अदरक / இஞ்சி – 1 ½ inch (chopped)
- Green chillies / हरी मिर्च / பச்சை மிளகாய் -3 (chopped)
- Hing powder (Asafoetida) / हींग / பெருங்காயம்– 1/8 tsp
- Curry leaves / करी पत्ते / கறிவேப்பிலை – few (chopped)
- Turmeric powder / हल्दी पाउडर / மஞ்சள் தூள் – ½ tsp
- Onions (big size) / प्याज / வெங்காயம் – 2 (finely chopped)
- Salt / नमक / உப்பு – required
- Garam masala powder / गरम मसाला / கரம் மசாலா – ¾ tsp
- Red chilli powder / लाल मिर्च पाउडर / சிவப்பு மிளகாய் தூள் – (¾-1) tsp
- Coriander leaves / धनिया / கொத்தமல்லி – few (chopped)
For green chutney:
- Coriander leaves / धनिया / கொத்தமல்லி – 2 cup ( 1 cup = 300ml)
- Mint leaves – 1 cup (1 cup = 300 ml)
- Onion (medium size) / प्याज / வெங்காயம்- 2
- Green Chillies / हरी मिर्च / பச்சை மிளகாய் -8 (chopped)
- Lemon / नींबू / எலுமிச்சை (medium size) – ½
- Fennel seeds (saunf) / सौंफ के बीज / பெருஞ்சீரகம் விதைகள் – 1 tsp
- Sugar / चीनी / சர்க்கரை – ¼ tsp
- Ginger / अदरक / இஞ்சி – 1 inch
- Garlic cloves / लहसुन / பூண்டு– 25
- Dried mango powder / आमचूर पाउडर / மாங்காய் தூள் – ¾ tsp
- black salt / काला नमक / கருப்பு உப்பு – ¼ tsp
- Salt / नमक / உப்பு – little less than required
- Water / पानी / தண்ணீர் – 150 ml
For preparing cheese masala idli:
- Idli batter / इडली बैटर / இட்லி மாவு – 1500 ml
- Chaat masala powder / चाट मसाला / சாட் மசாலா– required
- Green chutney – required
- Mozzarella cheese / मोज़रैला चीज़ / – required
Method
For preparing masala stuffing:
- Boil the potatoes in a steamer/Pressure cooker.
- Crumble the boiled potatoes. Crumbled potatoes are ready.
- Crackle the mustard seeds in the cooking oil (in a Kadai at medium flame).
- Add urad dal, cumin seeds, chana dal, Cashewnuts, Ginger, Green chillies, curry leaves, Heeng powder, Turmeric powder and Onions to it.
- Sauté until onions become pink and transparent.
- Add the crumbled potatoes, Garam masala powder, red chilli powder and required salt to it and mix it well. Sauté the mixture for 2 minutes at medium flame and turn off the flame.
- Garnish with chopped coriander leaves and mix it well. Stuffing (Masala) is ready.
- Divide the prepared stuffing equally and shape it to a small circle.
For preparing green chutney:
- Grind all the ingredients under green chutney to a paste.
For preparing cheese masala idli:
- Pour a big spoon of Idli batter in the molds of the idli plate.
- Add little green chutney to it.
- Place the stuffing (made it to a small circle) over it.
- Then, sprinkle little chaat masala powder over it.
- Add the grated cheese over it. Cover it with a small spoon of idli batter again.
- Cook the Idli in the steamer/ Idli cooker for 10 -12 minutes at high flame. Serve hot.
