Kuska biryani is a rice based dish dish pprepared with rice and spices. It is a delicious dish that can be prepared easily with out vegetables. Here is the simple recipe of it.

Ingredients

1 cup = 300 ml

1 tbsp = 15 ml

1 tsp = 5 ml

For soaking rice

  • Basmati rice / बासमती चावल / பாசுமதி அரிசி – 1 cup 
  • Water for soaking – 300 ml
  • Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 1 tbsp

For grinding

  • Onions (medium size) / प्याज / வெங்காயம் – 1
  • Green chillies / हरी मिर्च/ பச்சை மிளகாய் – 3
  • Garlic cloves / लहसुन/ பூண்டு – 14
  • Coconut milk / नारियल का दूध/ தேங்காய் பால் – 200ml
  • Curd / दही / தயிர் – 1 tbsp

For preparing kuska biryani

  • Cooking oil / खाना पकाने का तेल / சமையல் எண்ணெய் – 3 tbsp
  • Ghee / घी / நெய் – 1 tsp
  • Cardamom / इलायची / ஏலக்காய் – 6
  • Bay leaves / तेज पत्ता / பிரியாணி இலைகள் – 3
  • Cloves / लौंग / கிராம்பு – 11
  • Saunf (fennel seeds) / सौंफ के बीज / பெருஞ்சீரகம் விதைகள் – 1 tsp
  • Star anise / चक्र फूल / அண்ணாச்சி பூ – 2
  • Ginger garlic paste / अदरक लहसुन पेस्ट/ இஞ்சி பூண்டு பேஸ்ட் – 1 tsp
  • Cashew nuts / काजू / முந்திரி பருப்பு – 10 (chopped)
  • Green chillies (slit) / हरी मिर्च / பச்சை மிளகாய் – 2
  • Onions (medium size) / प्याज / வெங்காயம் – 2 (sliced)
  • Garam masala powder / गरम मसाला/ கரம் மசாலா– 1 tsp
  • Red chilli powder / लाल मिर्च पाउडर / சிவப்பு மிளகாய் தூள் – ¼ tsp
  • Turmeric powder / हल्दी पाउडर / மஞ்சள் தூள் – ¼ tsp
  • Tomato (medium size) / टमाटर / தக்காளி– 1 (finely chopped)
  • Mint leaves / पुदीना / புதினா இலைகள் – few (chopped)
  • Coriander leaves / धनिये के पत्ते / கொத்துமல்லி தழை – few (chopped)
  • Water for cooking – 150 ml
  • Cinnamon / दालचीनी / இலவங்கப்பட்டை– 2
  • Salt /  – required

Method

  1. Soak the basmati rice in water (300 ml) for 20 minutes.
  2. Drain the excess water from it and add cooking oil (1 tbsp) to it. Mix it well. Soaked rice is ready.
  3. Grind the onions (1) , garlic , green chillies (3) , coconut milk and curd to a smooth liquid mixture. Ground mixture is ready.
  4. Add cooking oil (3 tbsp) and ghee to the pressure cooker bottom.
  5. Then, add the bay leaves, cardamom, cloves, fennel seeds, star anise, ginger garlic paste, cashew nuts, green chillies (2, slit),  onions, garam masala powder, red chilli powder and turmeric powder to it. 
  6. Saute until onions become transparent.
  7. Add tomatoes, mint leaves (few) and coriander leaves (few) to it and cook until tomatoes becomes soft.
  8. Now, add the ground mixture, soaked basmati rice, mint leaves (few), coriander leaves (few), water (150 ml) and salt. Mix it well.
  9. Add Cinnamon stick to it and close it with a lid.
  10. Pressure cook for 13-14 minutes at low flame (with vent weight (pressure cooker weight)).
  11. Serve hot with Veg kurma hotel style | mix veg korma recipe | Vegetable kurma | white kurma recipe / curd.
